Because the Hebrew Scriptures were meticulously preserved by Jewish scribes. These scriptures were copies of the original autographs. The copies themselves were not divinely inspired. Only the original autographs were. We don't have the originals today, we have copies. These copies have been around since Moses's day. Prior to his writing Exodus, Leviticus, Numbers, and Deuteronomy, Moses edits family documents which made up Genesis. The reliability of the Hebrew Scriptures are authenticated by consistent manuscripts dating back bc. Furthermore since the eleventh century one can prove the integrity of the translations in that they remain the same as our versions of today. If man is capable of copying texts without error and he can and does, we can assume that the copyists prior to 11th century going all the way back bc and to Moses too, copied these original autographs without errors. The fact that it can be proved consistent shows God's preservation of his written word.
